Golosaria: Restaurant Nove di Villa della Pergola to win the prize for best dish of the year
Last November 4, in Milan during the presentation of the 2025 Golosaria Guide, the Nove Restaurant - Villa della Pergola in Alassio was awarded the Best Dish of the Year award. The winning dish was the Cabossa with Brigasca buttermilk, dill and watermelon.
An award assigned to a dish created by the young Pastry Chef Rebecca Segna who, having arrived in Chef Romano's kitchen this year, at just 23 years of age received this prestigious recognition:
“It was exciting to receive my first award, and for this reason it will remain indelible. I am very happy with how the season went, the growth and the understanding developed with the Chef which then led us to immediately obtain recognition: the icing on the cake! The cabossa was born from the input of the Chef who asked me to explore and try to use the cabossa and do something original and personal with it. We did many tests and in the end with perseverance and commitment we managed to obtain a result that reflected our intentions and the flavors we wanted to offer" says Pastry Chef Rebecca Segna.
